For its fifth property, the former Russell Hotel in Fitzrovia, Principal
Hotels has brought the “outside in” with an airy corner room designed
by Russell Sage, in collaboration with Redman’s business partner,
Margaret Crow. Neptune features high-ceilings and a separate oyster bar,
underlining the brand’s commitment to service locals eager to eat “on the hoof”.
Head chef – and transplanted Aussie – Brett Redman’s grasp of Asiatic and Pacific rim flavours informs the menu: a tribute to the oceans that keeps his team busy hand-picking Devon crab for immaculate starters, creating their own “vegetarian caviar” using a Japanese technique (there’s also Exmoor-reared British sturgeon caviar on the menu) and wood-roasting his monkfish to achieve a succulent sear that manages to preserve the juiciness in what can often be a bone-dry order.
Redman has already made his mark on the capital – notably at Elliot’s in Borough Market – and Neptune deserves to be another hit.
